Breakfast Muffins

I struggle with breakfast. As I am running out the door it is so easy to grab something and that something is never healthy. It is necessary for me to plan if I am going to make smart food choices and these breakfast muffins make a good afternoon snack as well as a healthy breakfast! I make them on Sunday evening so I have them for the week. Now, meal planning is not my thing. I am terrible at it. For some reason it overwhelms me so when I make something as simple as these egg muffins I get a little to excited!

Here is my recipe:

12 eggs beaten

3 T water

2 handfuls of chopped baby spinach

2 T bacon bits

any other topping you like!

Salt and pepper

Whisk it all together! Be sure to use non-stick cooking spray and fill your muffin pan. Cook for 15-20 min at 400 degrees. Let cool and store in the fridge.

Heat in the microwave for 25 seconds and you have a yummy, hot breakfast! Enjoy!
